Food and Beverage Video That Makes People Hungry
The specific techniques that make food look appetising on screen, why most restaurant video fails, and how generated imagery performs in this category.
Food video has an unusually direct success measure. Either the viewer wants to eat the thing or they do not, and that response happens in about a second, before any narration or branding registers. This makes the category more technically demanding than it appears, because appetite is triggered by a narrow set of visual cues and missing any of them produces footage that is well shot and completely inert.
The primary cue is texture, and it is where most amateur food video fails. Appetite responds to the visible evidence of the food's physical properties: steam rising, the crackle of a crust, the pull of melted cheese, condensation on cold glass, the specific way sauce moves. These are moments rather than states, which is why static beauty shots of a plated dish underperform footage of the same dish being cut, poured, lifted or broken. Motion reveals texture, and texture triggers appetite.
Light does the second half of the work and follows a rule that is close to universal in the category: light from behind and slightly to the side. Backlighting makes steam visible, produces highlights on wet and glossy surfaces, and separates the food from its background. Flat frontal light, which is what a ceiling fixture or an on camera light provides, kills all three effects simultaneously. This single decision separates most professional food footage from most restaurant footage.
Timing on set is a production constraint that clients regularly underestimate. Hot food photographs well for a few minutes and then collapses, ice melts, garnish wilts, and sauces skin over. A professional food shoot therefore works from multiple identical portions prepared in sequence, with the shot fully lit and framed before the hero portion arrives. A schedule that assumes one plate per dish will produce compromised footage of every dish after the first.
There is research behind the intuition that presentation drives appeal. Nishida et al. (2024) found that shape variety in food can boost its visual appeal, which supports the practice of building plates and frames with varied forms rather than uniform ones. Peng-Li et al. (2021) demonstrated that sound evoked cues influence consumer food choice through visual attention, which is a direct argument for the sound design that good food video depends on. The sizzle, the pour, the crunch, are not flourishes, they are part of the mechanism.
Sound in food video is close to half the effect and it is almost always created in post rather than captured on set. Location audio on a food shoot is contaminated by kitchen noise, air conditioning and the crew, so the crackle, the pour, the fizz and the knife through crust are recorded separately and placed against picture. A silent food video, which is what a phone shoot produces, is missing the sense entirely.
For generated imagery the category is more mixed than most, and it is worth being direct about where the line sits. AI generated food imagery performs well for atmosphere, environment, abstract ingredient beauty, packaging in context and stylised campaign frames. It performs poorly where the audience is being asked to believe they are looking at the actual dish they will be served, because small inaccuracies in a familiar object are noticed immediately, and because the gap between the image and the delivered plate creates a real customer expectation problem. Kirk and Givi (2025) found that authenticity perceptions shape consumer responses to AI generated marketing communications, which in a category built on trust about what arrives at the table is a commercial risk rather than an abstract one.
The workable hybrid for a restaurant or an F&B brand is to photograph or film the actual dishes, because those images carry the promise, and to use generated material for the surrounding world: the mood, the ingredients, the abstract textures, the campaign environments. That combination gives a brand a large, coherent content library at a manageable cost without misrepresenting the product.
Format planning matters because F&B content is consumed almost entirely on phones, vertically, at speed. The hero moment, the pour, the cut, the pull, should arrive in the first second rather than being built toward, and the framing should be tight enough to read at small size. Wide establishing shots of a beautiful dining room are pleasant and almost useless as social openings, because they contain nothing that triggers the response the video exists to trigger.
The most common brief failure in this category is asking for a film about the restaurant when what the business actually needs is a library of short pieces about the food. A single two minute brand film gets watched a few thousand times. Thirty properly built ten second dish clips get used for a year across menus, social, delivery platforms and advertising. For most F&B clients the second option is worth considerably more, and it is usually cheaper to produce in one well planned day.
